Second Annual Baltimore Deviled Egg Pageant

My first foray into deviled eggs, I would say, was a success.

My lovely, brilliant friend Martine held the inaugural Baltimore Deviled Egg Pageant last year.
The deviled egg pageant is a friendly (read: fierce) competition which I suspect was started partially as an excuse for Martine to show everyone how brilliant she is in the kitchen and partially for Martine to eat all the deviled eggs she can bear.
I didn't live here last year, so this was my first time participating. It was also, as I mentioned above, my first time making deviled eggs.

But there were prizes to be won. A tiara was at stake. I had to have that tiara.


A few months ago, while thrifting, I came across this egg press:


My thrifting partner brought up the upcoming egg pageant, and the wheels started turning. Flash forward to August. The deviled egg pageant is fast approaching. I Google deviled egg recipes and decide on Sriracha and Wasabi eggs.

The only big difference between my version and the recipe version is that I did not use Star Anise because I couldn't find it. For my soy sauce marinate mixture I used regular Anise, but did not put any in the yolk mixture.



Fun Fact: To make a square egg, you must peel a freshly boiled egg, put it in the press, and refrigerate for 5-10 minutes.


Another Fun Fact: I only had one egg press. I had a dozen eggs to press.

Saturday was spent boiling and pressing eggs. The recipe recommends letting them marinate at least four hours. I had other things to do so I let them marinate overnight.

Yes! I won Audience Choice and Best in Show. Truly my finest hour. Yesterday was also my one year anniversary of moving to Baltimore.

All in all, a wonderful way to spend my Baltiversary.
